Are you one of those people that spend your Sunday afternoon/evening getting your food ready and prepped for the week? Or, are you one of those people who want to try and eat healthier by organising your meals ahead of time? For those of you who like bananas and pancakes, here’s a super easy option to get your breakfasts prepped so you don’t have to get up extra early in the morning during the week to prep your breakfast…AND it only needs 3 simple ingredients. Here they are:
And there you have it, you get your fruit and your protein…..and you have yourself flourless pancakes that not only taste really good but they’re a healthier option to enjoy pancakes for breakfast. The amount of each ingredients you put in can be up to you, it all depends on how many you want to make. Just make sure that the mix isn’t too runny so try have an even amount of bananas to eggs, and add a pinch of cinnamon to taste. Just spray a fry pan with olive oil and cook until golden.
If you cook a bunch of them on the Sunday evening, you can store them in a container in the fridge and just heat them up in the morning or you can have it on the run (or even eat them at your desk at work). Either way, it takes very little prep time, very little ingredients and very little skill….something that definitely appeals to me on a Sunday evening when I’m getting ready for the week. Not to mention, it doesn’t make me feel so guilty during the week.
Enjoy! If you decide to try it for yourself, let me know what you think. 🙂
