So, after the holiday season, I’m sure a lot of us (including me) are looking to get back into healthy (or healthier) eating, and now that many of us are probably back at work from having some time off, we don’t want to spend a lot of time prepping or cooking either (well I know I don’t). So, here’s a really quick salmon dish that I actually made for tonight’s dinner that was easy and delicious – something I just made up with a few ingredients I already had. All I used was:
- 2 pieces of Atlantic Salmon
- 1 small avocado
- 1 small tomato
- Coriander/Cilantro – a few leaves
- Splash of lemon
- Seasoning (I used lemon pepper)
Lightly fry (using olive oil spray in a fry pan) the two pieces of salmon. Sprinkle seasoning on both sides and cook until brown (a little bit crisp on both sides). While the salmon is cooking, chop up the avocado and tomato. Serve on a plate with cooked salmon and finish off with a few coriander leaves and a squeeze of lemon on top.
It’s so simple and fast to whip up, and it really does taste delicious, especially if you’re a seafood lover like me. Not to mention, it’s a filling meal that doesn’t make you feel bloated after eating it. Winner!
